Healthy Buddha Bowl topped with Chris’ SMOOTH Hommus

Serves 2

Ingredients:

  • 1 cup tri-coloured quinoa

  • 1 200g tub of Chris’ new SMOOTH Hommus

  • 1 red capsicum

  • 1/4 red onion

  • 8 cherry tomatoes halved

  • 1/4 head of broccoli

  • 1 tsp sesame seeds

  • 1 tsp olive oil

  • 1/2 lemon in wedges

  • 3-4 basil leaves, roughly chopped

  • Salt and pepper to season

Method:

  1. Place quinoa into a saucepan and add 2 cups of water. Cover and place over medium heat for 15 minutes. Turn heat off and either pour out excess water or leave covered to absorb excess water.

  2. While quinoa is boiling, chop broccoli head into bite size pieces and place over a pot of bowling water to steam cook until bright green - we like it a little bit crunchy still. 

  3. While broccoli is steaming and quinoa is cooking, chop capsicum and onion up into bite size pieces. Slice cherry tomatoes in half.

  4. In a bowl place quinoa, broccoli, red capsicum, red onion and cherry tomatoes. 

  5. Top with a few dollops of Chris’ new SMOOTH Hommus.

  6. Squeeze lemon juice over the top and drizzle with olive oil.

  7. Top with basil leaves, sprinkle sesame seeds over the top and add salt and pepper to taste.
