Creamy Mac & Cheese

Serves 2

Ingredients:

  • 170g macaroni pasta, dry

  • 1 tsp salt

  • 1 cup mozzarella

  • 1/3 cup Chris’ Homestyle Cheese and Chive Dip

  • 70g chorizo, diced small

  • 1 tbs plain flour

  • 3 tbs olive oil

  • 1 ¼ cup milk

  • Big pinch of salt

  • Spring onions to garnish

Method:

  1. Cook the dry pasta in boiling water with the 1 tsp of salt according to the directions on the packet

  2. While the pasta is cooking, place chorizo and olive oil into a saucepan, stirring for a couple of minutes until the chorizo is fragrant

  3. Add in the flour and quickly mix

  4. Then add the milk in and mix until smooth (if there’s a few lumps, don’t worry)

  5. Add in the mozzarella, Chris’ Homestyle Cheese and Chive Dip, and a pinch of salt to taste, combine well

  6. Once pasta is cooked al dente, drain and put into the pan with the cheese mix and combine well

  7. Place the macaroni and cheese into a baking dish and garnish with spring onions then place under the grill until the top is golden brown

  8. Dig in!
