Sweet Potato Gnocchi with Spicy Capsicum Sauce
Ingredients:
Fresh Sweet Potato Gnocchi
1 200g tub Chris’ Traditional Spicy Capsicum Dip
8 slices prosciutto
1 cup walnuts, chopped
1 bunch fresh basil roughly torn
1 lemon
Olive oil
Parmesan cheese, to serve
Method:
Pre-heat oven to 180 degrees Celsius
Place the prosciutto flat on a lined tray and bake for 10 minutes, or until crispy
Pre-heat the olive oil in a frypan on the cooktop
Panfry the sweet potato gnocchi until cooked through
Reduce heat to low and stir through the Chris’ Spicy Capsicum Dip, walnuts and basil.
Grate the rind of half a lemon over the gnocchi and squeeze the juice of half of the lemon on top.
Break the crispy prosciutto into shards and sprinkle on top of the gnocchi, along with a generous amount of parmesan cheese and serve.
