Lamb Souvlaki with Tzatziki

Serves 4

Ingredients:

Method:

  1. Preheat oven to 220 degrees

  2. Place lamb in baking dish and marinate with olive oil, oregano, salt and pepper

  3. Place lamb in oven and back for approx. 28 minutes or until slightly crispy on the outside

  4. While lamb cooks, slice up tomatoes, onion and lettuce

  5. Take lamb out of the oven and leave to rest for 5 - 10 minutes

  6. While lamb rests, heat pita bread either in a pan or in the oven

  7. Thinly slice your lamb up on an angle

  8. We recommend starting with pita, the spreading a thin layer of Chris’ Tzatziki on the bottom, then place lettuce, tomato and then lamb. Top with onion pieces and add a few more dollops of Chris’ Tzatziki on top to finish.

  9. Top with a squeeze of fresh lemon

  10. Enjoy!
