Tzatziki & Roasted Garlic Potato Salad

Ingredients:

  • 1 bag mini potatoes 

  • 2 lemons 

  • 1 bunch of dill  

  • ½ red onion 

Method:

  1. On the stove, begin to boil some lightly salted water. Once you’ve got a rolling boil, add in your chopped mini potatoes. We recommend bite size pieces for maximum deliciousness. Boil for 12 - 15 minutes until tender.

  2. While your potatoes are cooking, finely chop up 1/2 a red onion and 1 bunch of dill. 

  3. Drain your potatoes, before transferring them to a bowl, then adding in your onion and dill. Add a few generous dollops of Chris’ Homestyle Tzatziki & Roasted Garlic Dip, as well as the juice of 1 lemon. We recommend adding some salt and pepper to taste in here also. 

  4. Mix well to combine, and top with extra dill and lemons!
