Berry Yoghurt Breakfast Bowl

 

Makes 2

Ingredients

For Bowl:

  • 4 tablespoons of Chris’ Pot Set Greek Yoghurt

  • 1 cup granola

  • 2 teaspoons to chia seeds

  • 6 - 8 fresh strawberries

For Berry Compote:

  • 400g fresh strawberries

  • 1/4 cup maple syrup

  • 1 tablespoon fresh lemon juice

  • 1/2 teaspoon vanilla extract

Method

For Berry Compote:

  1. Hull and slice your strawberries

  2. Combine strawberries, maple syrup, lemon juice & vanilla in a small saucepan.

  3. Bring to a simmer over medium heat and cook, stirring occasionally, for 15 to 18 minutes or until the strawberries are soft.

  4. Remove from heat (compote will thicken as it cools).

  5. After completely cooled, transfer for an airtight container or jar and store in the fridge for up to a week.

To Build Your Bowl:

  1. Place 2 tablespoons of yoghurt into each bowl (we are making 2 bowls with this recipe).

  2. Top with half a cup of granola, and 1 teaspoon of chia seeds on each bowl.

  3. Slice some fresh strawberries and add to the top of each bowl

  4. Drizzle berry compote over each bowl, serve and enjoy!
