Herby Salmon Flatbreads with Yoghurt Dressing

Ingredients:

  • 4 x small flatbreads

  • 200g smoked salmon

  • 1 packed cup of herbs (parsley/mint/dill)

  • ¼ cup extra virgin olive oil

  • ½ tsp salt

  • ¼ tsp pepper

  • ½ red onion, sliced finely

  • Juice and zest of one lemon

  • ½ cup Chris’ Traditional Greek-Style Natural Yoghurt

  • ¼ cup water

Method:

  1. Preheat oven to 180 degrees Celsius

  2. Place herbs, and olive oil into a bowl and combine well

  3. Place flatbreads on baking trays and equally spoon herbs onto them, spreading out slightly

  4. Top with salmon and onion then bake for 20 minutes

  5. While it’s cooking, combine lemon, water, yoghurt, salt and pepper then set aside

  6. Once flatbreads are cooked, serve with yoghurt dressing and enjoy
